Incidencias turísticas en las unidades estratégicas de negocio de turismo enológico. Medición a través de indicadores en el Oasis de Tulum, Ullum y Zonda (OTUZ). Provincia de San Juan – Argentina

Abstract

Desde hace varios años, la provincia de San Juan ha producido vinos de muy buena calidad, lo que ha propiciado que sea reconocida no solamente en todo el país, sino también en otras partes del mundo. Debido a ello, numerosas personas han comenzado a frecuentar las bodegas, a fin de conocer como es el proceso de elaboración, degustar y comprar los productos. Esto ha originado un importante crecimiento del turismo tenológico, en gran escala, siendo un factor determinante del desarrollo económico provincial. La presente tesis, propone instrumentos de mediciones (indicadores) que permitan indagar las incidencias que produce la actividad turística y las bodegas, ya que existe un vacío sobre las relaciones y consecuencias que producen ambas. Aparentemente se desconocen los efectos del turismo y de las bodegas (considerados como aquellas consecuencias, que siguen los resultados de una causa que la misma produce, en este caso el accionar de las bodegas). Estos efectos pueden ser positivos, tales como: el crecimiento económico y el aumento de fuentes laborales; o negativos, como la contaminación ambiental, la aculturación, entre otros. Por lo tanto, es necesario indagar e investigar, sobre el conocimiento específico de las particularidades, relaciones y dimensiones, acerca de los efectos producidos por la actividad turística, en las bodegas. Es aquí, donde se vinculan, gran cantidad de fuerzas propulsoras del desarrollo endógeno, formadas por diversos elementos, como: la cultura del vino, la gastronomía autóctona, el patrimonio y otras industrias derivadas de la madera, el vidrio, metales, papel, plástico, entre otras. Con el entrecruzamiento de los factores estudiados, se determinó la incidencia del turismo enológico y las bodegas, en relación a las incidencias que producen, en su mayoría, de tipo medio ambiental y económico. Esto afecta, directa e indirectamente, el desarrollo turístico endógeno del Oasis de Tulum-Ullum- Zonda y la competitividad. La conclusión de este estudio, permitió generar instrumentos de medición que permitan ampliar y profundizar el conocimiento actual, para conocer y comprender, las incidencias del turismo del vino y las bodegas y los efectos en la comunidad receptora.

From some years, the province of San Juan has been producing wines of great quality. This has caused that the province is well-known for its wines not only in different parts of the country but also, around the world. Because of this, many people have been attracted to the wine´s world. As a result, they have begun to visit wineries to not only learn about the wine making process but also, taste the different kinds of wine and buy them. This has produced an increase in the development of enological tourism. Being a decisive factor for the economic development of the province. The thesis proposes measuring instruments (quality indicators) in order to look into the incidences of the tourist activity and the wineries, due to the existence of an empty as regards the relations and consequences that both produce in relation to the economy, society, culture and environment. Apparently, the effects of tourism and wineries are unknown (consider them as those consequences that follow the results of a cause that the same produce, in this case the run of the wineries). These effects can be positives such as: economic growth and the increase in the source of employment; or negative like the environmental pollution, acculturation, among others. Therefore, It is necessary look into the specific knowledge related to the peculiarities, relations and the deepest dimensions referred to the effects that are produced for the tourist activity in the wineries. In this point is where the great amount of impulsive forces of the endogenous development , formed by a variety of elements such as : the wine culture, native gastronomy, heritage and others industries derive from the wood, glass, metals, paper, plastic, among others. Through the intertwined of the studied factors, it was determined the incidences of enological tourism and wineries which is meaningful in relation with the effects that produces. Most of them are environmental and economic which affect directly and indirectly the touristic endogenous development of the Oasis of Tulum-Ullum-Zonda. The conclusion of this study allowed the development of measure instruments that permit increase and go into details the current knowledge and understand, the incidence of enotourism and wineries in relation with the enological industry and its effect in the receptive communitive.
